Carob is an energy food because it contains 50% natural sugar and 10% protein. The seeds are rich in soluble fiber which aid digestion.
It has no gluten so it is a food suitable for coeliacs. Carob is rich in fiber, beneficial intestinal flora increase lactobacilli. It is very rich in tannin, a potent natural antioxidant. The carob has a favorable action against inflammation of mucous membranes, reducing irritation in both respiratory and digestive. It is a good source of B vitamins such as B1 or thiamine, B2 or riboflavin (1 mg. / Kg.), B3 or niacin and pro-vitamin A or beta-carotene. It is rich in potassium, magnesium, phosphorus (0.2%), iron (20 mg. / Kg.), Calcium (0.2%) and silicon.
