Amaranth brings great benefits including relatively high levels of protein (15-18%) and starch (48-62%). Its protein is superior to other cereals. Nutritional value would be greater than that of cow's milk. Contains high levels of lysine, tryptophan and adequate amounts of sulfur amino acids, whereas in the majority of grain lysine and tryptophan are found in low proportions, as the sulfur amino acids in legumes. Grain amaranth has no gluten, making it a recommended food for coeliacs, ie, those with intolerance to this item. We also recommend its use for people with autism. Also ideal for athletes and muscle development. Diets high in fiber, amaranth has a beneficial effect on chronic degenerative diseases such as diabetes mellitus and obesity, helping to reduce serum triglycerides and cholesterol in dyslipidemia and cardiovascular disease. In addition, the leaves of amaranth used as fusion are effective against diarrhea. The seeds can be used for cereal bars, cookies and smoothies or just mixed with raisins, cereal, almonds among others, as another option for breakfast and full energy.
Boil 1 part amaranth to 1 and 1/4 of water for 10 minutes over low heat.
Let stand 5 minutes.
